  • 1 pound beef tenderloin or flank steak
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 French baguette, sliced into 1/2-inch rounds
  • 1 tablespoon butter, melted
  • 1 large yellow onion, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1/2 cup sour cream
  • 2 tablespoons prepared horseradish
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh chives, chopped

Instructions

  1. Season the steak with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for 3 to 4 minutes per side for medium-rare. Remove the steak from the skillet and let it rest for 10 minutes before slicing thinly against the grain.
  2. While the steak rests, melt the butter in the same skillet over medium heat. Add the sliced onion and cook slowly, stirring occasionally, for 15 to 20 minutes until deeply caramelized. Stir in the balsamic vinegar during the last minute of cooking. Remove from heat.
  3. Preheat your oven to 375 degrees Fahrenheit. Brush both sides of the baguette slices lightly with melted butter. Arrange them on a baking sheet and toast for 5 to 7 minutes, flipping once, until golden brown and crisp.
  4. Prepare the horseradish cream: In a small bowl, whisk together the sour cream, prepared horseradish, and Dijon mustard until smooth.
  5. Assemble the steak crostini: Spread a small amount of horseradish cream onto each toasted baguette slice. Top with a slice of rested steak, a portion of the caramelized onions, and a sprinkle of fresh chives. Serve immediately.

Notes

  • For a richer flavor, use filet mignon bites instead of flank steak.
  • If you prefer a sweeter topping, substitute the caramelized onions with a fig jam.
  • You can prepare the horseradish cream and onions up to one day ahead and store them separately in the refrigerator.
