  • 3 cups cooked and mashed sweet potatoes (about 3 pounds raw)
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • For the Topping:
  • 1 cup packed light brown sugar
  • 1/3 cup all-purpose flour
  • 1/3 cup (about 5 1/3 tablespoons) unsalted butter, melted
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, 1/2 cup melted butter, eggs, milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until the filling is smooth and well combined.
  3. Spread the sweet potato mixture evenly into the prepared baking dish.
  4. Prepare the pecan streusel topping: In a separate medium bowl, mix together the brown sugar and flour. Pour in the 1/3 cup melted butter and stir until the mixture is crumbly.
  5. Stir the chopped pecans into the brown sugar mixture until they are coated.
  6. Sprinkle the pecan streusel topping evenly over the sweet potato filling.
  7. Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is heated through.
  8. Let the casserole cool for 10 minutes before serving.

  • You can prepare the sweet potato filling up to 2 days ahead and store it covered in the refrigerator. Add the topping just before baking.
