  • 3 lb pork loin roast, bone-out
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork loin roast dry with paper towels. This helps create a good crust.
  3. In a small bowl, mix the kosher salt, black pepper, garlic powder, and dried thyme.
  4. Rub the olive oil all over the pork loin roast.
  5. Sprinkle the seasoning mix evenly over the entire surface of the roast, pressing gently so it adheres.
  6. Place the seasoned roast in a roasting pan or on a rimmed baking sheet.
  7. Roast at 400°F (200°C) for 15 minutes.
  8. Reduce the oven temperature to 350°F (175°C). Continue roasting until the internal temperature reaches 145°F (63°C) on a meat thermometer inserted into the thickest part of the roast. This usually takes about 20 minutes per pound.
  9. Remove the pork loin roast from the oven when it hits 145°F (63°C).
  10. Transfer the roast to a cutting board and tent loosely with foil. Let it rest for 10 to 15 minutes before slicing. This resting period is key for a juicy pork loin.
  11. Slice against the grain and serve immediately. You can make a simple pan sauce gravy using the drippings.

  • For a pan sauce gravy, place the roasting pan over medium heat on the stovetop. Scrape up any browned bits from the bottom. Whisk in 1 tablespoon of flour, cook for one minute, then slowly whisk in 1 cup of beef or chicken broth until thickened.
  • If you prefer a more intense sear, you can sear the roast on all sides in a hot, oven-safe skillet before placing it in the oven.
