  • 1.5 pounds ground beef
  • 1 large onion, chopped

  • 4 cups beef broth

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 2 cups all-purpose flour (for dumplings)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt (for dumplings)
  • 1/2 cup cold butter, cut into pieces
  • 1/2 cup milk (for dumplings)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add chopped onion, carrots, and celery to the pot. Cook until vegetables soften, about 5 minutes.
  3. Stir in beef broth, thyme, rosemary, salt, and pepper. Bring the mixture to a simmer.
  4. In a small bowl, whisk together 1/4 cup flour and 1 cup milk until smooth. Pour this mixture into the simmering beef stew, stirring constantly until the gravy thickens slightly. Reduce heat to low.
  5. Prepare the dumplings: In a medium bowl, whisk together 2 cups flour, baking powder, and 1/2 teaspoon salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Stir in the 1/2 cup milk until just combined to form a soft dough. Do not overmix.
  7. Drop spoonfuls of the dumpling dough onto the simmering stew, leaving a little space between them.
  8. Cover the pot tightly, increase heat slightly to maintain a gentle simmer, and cook for 15 minutes without lifting the lid.
  9. Remove from heat and let stand for 5 minutes before serving this cozy dinner delight.
