Make shatteringly crisp, buttery graham cracker toffee bars at home. This easy recipe layers graham crackers with rich toffee and chocolate for a crunchy, addictive treat perfect for holidays or gifting.

  • 1 ½ sleeves graham crackers (about 13 to 15 crackers)
  • 1 ¼ cups unsalted butter
  • 1 ¼ cups dark brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 ½ cups semi-sweet chocolate chips
  • ½ cup chopped pecans or walnuts (optional)
  • Sea salt for sprinkling (optional)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with aluminum foil and place a layer of graham crackers on the bottom to cover the sheet completely.
  2. In a medium saucepan, combine the butter and brown sugar. Bring the mixture to a boil over medium heat, stirring constantly. Once boiling, continue to boil for exactly 3 minutes without stirring.
  3. Remove the saucepan from the heat immediately and stir in the vanilla extract.
  4. Pour the hot toffee mixture evenly over the graham crackers on the baking sheet. Spread quickly to cover all the crackers.
  5. Bake for 5 minutes. The toffee should look bubbly.
  6. Remove the sheet from the oven. Immediately sprinkle the chocolate chips evenly over the hot toffee layer. Let the chocolate sit for 5 minutes to soften.
  7. Spread the softened chocolate into an even layer. If using, sprinkle chopped nuts and sea salt over the chocolate.
  8. Allow the toffee to cool completely at room temperature until the chocolate is firm, about 1 to 2 hours, or place it in the refrigerator for 30 minutes to speed up the process.
  9. Once fully set, break the graham cracker toffee into irregular pieces. Store in an airtight container.

Notes

  • For a shatteringly crisp result, do not substitute the dark brown sugar with white sugar in the toffee layer.
  • You can substitute semi-sweet chocolate chips with milk chocolate or white chocolate for variation.
  • This recipe is excellent for making ahead and packaging as homemade candy gifts for the holidays.
