Ingredients
Scale
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup milk
1/4 cup vegetable oil
1 large egg
1 cup shredded mozzarella cheese
1/2 cup pizza sauce
1/2 cup mini pepperoni, chopped
Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease a standard 12-cup muffin tin or line with paper liners.
In a large bowl, whisk together the flour, baking powder, salt, and pepper.
In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
Gently fold in the mozzarella cheese and chopped pepperoni.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Top each muffin with about 1 teaspoon of pizza sauce.
Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
You can substitute the pepperoni with cooked, crumbled sausage or finely chopped vegetables like bell peppers.
These freeze well; cool completely, then place in a freezer-safe bag for up to three months. Thaw overnight or reheat from frozen in a microwave or toaster oven.
