Bake these bite-size pizza muffins for a simple, kid-friendly snack, party food, or freezer lunch option.

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni, chopped

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a standard 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
  5. Gently fold in the mozzarella cheese and chopped pepperoni.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with about 1 teaspoon of pizza sauce.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • You can substitute the pepperoni with cooked, crumbled sausage or finely chopped vegetables like bell peppers.
  • These freeze well; cool completely, then place in a freezer-safe bag for up to three months. Thaw overnight or reheat from frozen in a microwave or toaster oven.
