This recipe creates a flavorful, make-ahead appetizer using layered cheddar and cream cheese soaked in an herby olive oil and vinegar marinade. It is perfect for parties and gatherings.

  • 8 ounces cream cheese, softened
  • 8 ounces sharp cheddar cheese, cubed
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup fresh parsley, chopped
  • Crackers or pita chips, for serving

Instructions

  1. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, basil, garlic powder, pepper, and salt to create the marinade.
  2. In a serving dish or small glass container, layer the softened cream cheese on the bottom.
  3. Arrange the cubed cheddar cheese on top of the cream cheese layer.
  4. Pour the prepared marinade evenly over the cheese layers.
  5. Sprinkle the chopped fresh parsley over the top.
  6. Cover the dish tightly with plastic wrap.
  7. Refrigerate for at least 4 hours, or preferably overnight, to allow the cheese to absorb the marinade flavors. This is the best make ahead party food step.
  8. Before serving, let the cheese sit at room temperature for about 15 minutes.
  9. Serve directly from the dish with crackers or pita chips for dipping.

Notes

  • You can substitute Havarti or Monterey Jack for the cheddar cheese combination.
  • For an extra layer of flavor, add 1/4 cup of sliced black olives or roasted red peppers to the marinade before chilling.
  • This dish is excellent for potluck cheese dishes and holiday hors d’oeuvres.
