High-Protein Copycat Starbucks Egg Bites (Oven Baked)

Make fluffy, high-protein egg bites at home using an oven method. These are a great low carb, quick grab and go breakfast perfect for meal prep.

  • 1 cup cottage cheese (full fat or low fat)
  • 6 large eggs
  • 1/4 cup Greek yogurt (plain, nonfat)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup shredded cheese (Monterey Jack or cheddar blend)
  • 1/2 cup cooked bacon, crumbled (optional)
  • 1/2 cup chopped spinach (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Lightly grease a 12-cup muffin tin or silicone egg bite mold.
  2. In a blender, combine the cottage cheese, eggs, Greek yogurt, salt, pepper, and garlic powder. Blend until the mixture is completely smooth and creamy. This step is key for fluffy egg bites.
  3. Stir in the shredded cheese and any desired mix-ins, like bacon or spinach, into the blended egg mixture. Do not overmix.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Place the muffin tin on a baking sheet. Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  6. Remove from the oven and let the egg bites cool in the tin for 5 minutes before carefully removing them.
  7. For best results when meal prepping, let them cool completely before storing them in an airtight container in the refrigerator for up to 4 days.

Notes

  • For a true Starbucks sous vide copycat texture, use a blender to ensure the cottage cheese is fully incorporated.
  • These egg bites are excellent for keto diets and are naturally low carb.
  • Reheat in the microwave for 30 to 45 seconds for a quick breakfast.
  • You can substitute Greek yogurt with sour cream or cream cheese for a richer texture.
