Make these juicy and flavorful Honey Garlic Chicken Skewers for a quick weeknight dinner or your next party. This simple recipe works well whether you grill them or bake them in the oven.

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/4 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 4 cloves garlic, minced
  • 1 tsp ground ginger
  • 1/4 tsp black pepper
  • Optional: 1 red bell pepper, cut into 1-inch pieces
  • Optional: 1 red onion, cut into 1-inch pieces
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes before use)

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, minced garlic, ground ginger, and black pepper.
  2. Marinate the chicken: Place the cubed chicken into the marinade. Toss to coat completely. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. Preheat your cooking surface: If grilling, preheat your grill to medium-high heat (about 400°F). If baking, preheat your oven to 400°F (200°C) and line a baking sheet with foil or parchment paper.
  4. Assemble the skewers: Thread the marinated chicken pieces onto the soaked wooden or metal skewers. If using vegetables, alternate chicken pieces with bell pepper and onion chunks.
  5. Cook the skewers: If grilling, place the skewers on the oiled grates. Grill for 10-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred. If baking, arrange the skewers on the prepared baking sheet. Bake for 18-22 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C).
  6. Serve: Remove the chicken skewers from the heat. Let them rest for 5 minutes before serving. You can brush with any leftover marinade (that has not touched raw chicken) during the last few minutes of cooking for extra glaze.

Notes

  • For air fryer cooking, arrange the skewers in a single layer in the basket. Cook at 380°F (195°C) for 10-12 minutes, flipping halfway through.
  • This marinade works well for making a quick batch of marinated chicken kebabs for a backyard BBQ.
  • You can substitute the honey with maple syrup for a slightly different sweetness profile.
