2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
1/4 cup honey
1/4 cup soy sauce (low sodium preferred)
2 Tbsp rice vinegar
1 Tbsp sesame oil
4 cloves garlic, minced
1 tsp ground ginger
1/4 tsp black pepper
Optional: 1 red bell pepper, cut into 1-inch pieces
Optional: 1 red onion, cut into 1-inch pieces
Wooden or metal skewers (soak wooden skewers in water for 30 minutes before use)
Instructions
Prepare the marinade: In a medium bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, minced garlic, ground ginger, and black pepper.
Marinate the chicken: Place the cubed chicken into the marinade. Toss to coat completely. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Preheat your cooking surface: If grilling, preheat your grill to medium-high heat (about 400°F). If baking, preheat your oven to 400°F (200°C) and line a baking sheet with foil or parchment paper.
Assemble the skewers: Thread the marinated chicken pieces onto the soaked wooden or metal skewers. If using vegetables, alternate chicken pieces with bell pepper and onion chunks.
Cook the skewers: If grilling, place the skewers on the oiled grates. Grill for 10-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred. If baking, arrange the skewers on the prepared baking sheet. Bake for 18-22 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C).
Serve: Remove the chicken skewers from the heat. Let them rest for 5 minutes before serving. You can brush with any leftover marinade (that has not touched raw chicken) during the last few minutes of cooking for extra glaze.
Notes
For air fryer cooking, arrange the skewers in a single layer in the basket. Cook at 380°F (195°C) for 10-12 minutes, flipping halfway through.
