  • 2 slices artisan bread (sourdough recommended)
  • 1/4 cup whole milk ricotta cheese
  • 1 large egg
  • 1 teaspoon butter or olive oil
  • 1 teaspoon honey
  • Pinch of sea salt
  • Pinch of black pepper
  • Optional: Pinch of red pepper flakes

Instructions

  1. Toast the bread slices until golden brown and crisp.
  2. While the bread toasts, prepare the egg. Heat the butter or oil in a small non-stick skillet over medium-low heat.
  3. Crack the egg into the skillet. Cook the egg to your preference; a runny yolk is recommended for creaminess. Season the egg with salt and pepper.
  4. Remove the toast from the toaster. Spread the ricotta cheese evenly over both slices of toast.
  5. Carefully slide the cooked egg on top of the ricotta layer on one slice of toast.
  6. Drizzle the honey over the egg and ricotta. Sprinkle with black pepper and optional red pepper flakes.
