  • 1/4 cup dry white wine or vegetable broth
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese, plus more for serving
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve 1 cup of the starchy pasta water before draining. Set the drained pasta aside.
  2. While the pasta cooks, melt the butter and olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook without stirring for 3-4 minutes to allow them to brown.
  3. Stir the mushrooms and cook until they release their moisture and turn golden brown, about 5 to 7 minutes total.
  4. Add the minced garlic and dried thyme to the skillet. Cook for 1 minute until fragrant.
  5. Pour in the white wine or broth to deglaze the pan, scraping up any browned bits from the bottom. Let the liquid reduce by half, about 2 minutes.
  6. Reduce the heat to medium-low. Pour in the heavy cream and bring the sauce to a gentle simmer. Cook for 3 minutes until the sauce slightly thickens.
  7. Remove the skillet from the heat. Stir in the grated Parmesan cheese, salt, and pepper until the sauce is smooth.
  8. Add the cooked pasta to the skillet. Toss to coat. If the sauce seems too thick, add the reserved pasta water, one splash at a time, until you reach your desired creamy consistency.
