Ingredients
Scale
1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cooked white or brown rice
1/2 cup buffalo sauce (use your favorite brand)
1/4 cup unsalted butter, melted
1/2 cup shredded cheddar or Monterey Jack cheese (optional)
1 cup shredded lettuce or chopped romaine
1/2 cup chopped celery
1/4 cup sliced carrots
For Ranch Drizzle: 1/2 cup ranch dressing
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, salt, and pepper. Cook the chicken until it is browned on all sides and cooked through, about 6 to 8 minutes.
While the chicken cooks, whisk together the buffalo sauce and melted butter in a small bowl until fully combined.
Pour the buffalo sauce mixture over the cooked chicken in the skillet. Stir well to coat all the chicken pieces evenly. Reduce the heat to low and let it simmer for 2 minutes.
If using cheese, sprinkle it over the chicken mixture and cook until melted, about 1 minute.
Divide the cooked rice evenly among four serving bowls.
Top the rice in each bowl with the sauced buffalo chicken.
Arrange the lettuce, celery, and carrots around the chicken in each bowl.
Drizzle the ranch dressing over the top of each Buffalo Chicken Bowl before serving.
Notes
For a low-carb buffalo chicken bowl option, substitute the rice base with cauliflower rice or mixed greens.
To prepare this recipe for meal prep, store the chicken, rice, and fresh vegetables in separate airtight containers. Assemble just before eating.
If you prefer a less spicy flavor, reduce the amount of buffalo sauce or add a teaspoon of honey to the sauce mixture.
