Ingredients
Scale
2 cups rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup brown sugar
1/4 cup granulated sugar
2 large eggs
2 cups milk
1/4 cup melted butter
1 teaspoon vanilla extract
2 medium apples, peeled and diced
1/2 cup chopped pecans (for topping)
1/4 cup brown sugar (for topping)
2 tablespoons all-purpose flour (for topping)
2 tablespoons cold butter, cut into small pieces (for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
In a large bowl, combine the rolled oats, baking powder, cinnamon, salt, 1/4 cup brown sugar, and 1/4 cup granulated sugar. Mix well.
In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
Pour the oatmeal mixture into the prepared baking dish.
Prepare the streusel topping: In a small bowl, combine the 1/2 cup pecans, 1/4 cup brown sugar, and flour. Cut in the 2 tablespoons of cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Sprinkle the streusel topping evenly over the oatmeal mixture.
Bake for 35 to 40 minutes, or until the center is set and the topping is golden brown and crunchy.
Let the baked oatmeal cool for 10 minutes before cutting into squares. This recipe is great for make ahead breakfast preparation.
Notes
You can substitute fresh blueberries or other firm fruit for the apples if you prefer a different fruit baked oatmeal flavor.
For freezer friendly breakfast portions, cut the cooled oatmeal into squares and freeze them in an airtight container. Reheat individual servings in the microwave.
This healthy oatmeal casserole reheats well in the oven or microwave for quick weekday mornings.
