Bacon-Wrapped Dates with Goat Cheese

Prepare this sweet and salty appetizer, often called Devils on Horseback, by stuffing dates with goat cheese, wrapping them in bacon, and baking until crisp.

Ingredients

  • 12 Medjool dates
  • 4 oz soft goat cheese
  • 12 thin slices bacon
  • 12 wooden toothpicks

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Carefully slice each date lengthwise down one side and remove the pit.
  3. Stuff about one teaspoon of goat cheese into the cavity of each pitted date.
  4. Cut each bacon slice in half crosswise.
  5. Wrap one half-slice of bacon around each stuffed date, securing it with a toothpick if necessary.
  6. Place the wrapped dates on the prepared baking sheet.
  7. Bake for 15 to 20 minutes, turning halfway through, until the bacon is crisp and cooked through.
  8. Remove from the oven and let cool slightly before serving warm.

Notes

  • For extra flavor, you can stuff the dates with a whole blanched almond instead of cheese.
  • If your bacon slices are thick, you may need to increase the baking time by 5 minutes.
  • Serve these immediately after they cool enough to handle.
